Shirataki Sake Brewery was founded in 1855, when Tosuke Minatoya began brewing sake in Yuzawa—nestled in deep snow and pure meltwater. He welcomed travelers making their way from Tokyo to the Sea of Japan with a
cup of sake.

Since then, Shirataki has blended tradition with innovation, crafting sake that reflects both heritage and modern sensibilities. Our signature sake Jozen Mizuno Gotoshi embodies the spirit of “Go with the Flow”—Embracing nature’s rhythm, adapting with grace, and going with the flow.

越後湯沢駅から徒歩5分。「上善如水」で知られる白瀧酒造の醸造蔵の隣に、ショップ・試飲カウンター・酒蔵体験ラウンジを備えた、新しい日本酒体験の発信拠点「 shop & taproom Flow」が、2025年6月にオープンしました。

白瀧酒造は、1855年に湊屋藤助が東京と日本海を結ぶ山脈の麓に位置する湯沢の地で、雪解け水に恵まれた自然環境で旅人や商人をもてなすために酒造りを始めたことが起源とされています。

それから170年。長い歴史の中で伝統を守りながらも、代表銘柄「上善如水」に象徴されるように時代の感性を取り入れた革新的な酒造りを続けてきました。

－雪が溶けて清らかな水となり、田んぼを潤すように、自然の流れに身をゆだね、酒を醸し人を潤す－ 「上善如水」の精神 “Go with the Flow” を現代の感性で受け継ぎ、日本酒と自然、人と文化が繋がる新たな場を構想しました。

施設名の “Flow” は「循環・流れ・流動」を意味します。

雪・水・米といった自然資源の “循環“ に育まれた日本酒を通じ世界中から行き交う人々の “合流” 、感性やアイデアの ”交流” を生み、様々な “Flow (流れ)” が交わる空間で、新しいSAKEカルチャーを醸していく、そんな願いが込められています。
